When the weather starts to get cooler I start to feel like cooking. It happens every year. I'm not sure why. This weekend I was off and started to think about what I would enjoy cooking. Friday afternoon baked some chicken thighs and made my boozy bourbon barbecue sauce. The results were fantastic. Saturday I helped at "Spuds and Dogs" a delicious fundraiser at my church. If you love putting toppings on your food you should have had lunch at The United Methodist Church in Matamoras. We made grilled hot dogs and real baked potatoes with your choice a savory toppings. We had everything chili, bacon bits, cheese. chives, onions and more. Kim and Gracie came with me. We had such a nice time relaxing and watching Gracie play with some of the other kids in front of the church. Then on Sunday I took a frozen corned beef out of the freezer and baked it. I always buy and freeze extra corned beef when it goes on sale for St. Patrick's Day. This was the only one I had left. The last few times I have baked my corned beef instead of boiling it. Each time the end result was too salty. This time I soaked the corned beef in clear boiling water twice before I put it in the oven to bake. The process removed just enough brine and salt from the meat. The end result was corned beef with a nice texture and great flavor. The other pictures posted this morning were taken by my grand daughter Gracie. When I was taking a nap she took my phone and started taking pictures. I have a lot of pictures to delete. She did take a couple of cute ones.
