Steve Allan and I joked about this on Friday morning. We both could care less about who won the Big Game. There's a lot of talk about food leading up to the game so that always inspires me to get creative in the kitchen. This weekend I brought back something delicious thanks to my son Matt. Years ago I used to make an easy chicken dish with salsa and boneless chicken breasts in my slow cooker. Matt made this dish last week. His house smelled so good when I stopped by. So that's what I made this weekend. Just put two or three chicken breasts in a slow cooker and dump in almost all of a large jar of mild salsa. Let it go on high for about four hours. Then shred the chicken with a knife and fork. I made yellow rice as the side dish and poured the chicken over a piece of flat bread. Everyone loved it.
I was up very early Sunday Morning to clean off my side walk and driveway. There was more snow than I expected. So I did half before the sun even came up. Then went back out to finish in the afternoon. Too much shoveling at the same time is risky behavior for a man my age. Even though I'm in good health. On Friday, my grand daughter Gracie went to her school's Valentine's Day dance. She is growing up so fast. She picked out her dress and shoes with mommy. These social events are so important to us when we're young. She reminded me of me. Everything had to be just right. She had a great time.
